01 / ABOUT THE PLACE

About this place

Stepping off the busy avenues of Ginza into Ippudo - Ginza, diners are greeted by the warm aroma of bubbling pork bone broth. The dining room pairs counter seats with tidy tables in a clean, brightly lit setting, suiting both a brisk solo lunch during work hours and a relaxed evening bowl.

The core choice lies between the classic Shiromaru Motoaji, highlighting the straight, silky sweetness of tonkotsu, and Akamaru Shinmi, which introduces garlic-infused oil and spicy miso for a deeper kick. Upgraded bowls like the Kiwami or Bari-Mori come heaped with slow-cooked pork loin chashu, thick-cut pork belly, seasoned soft-boiled eggs, and crisp nori seaweed. Noodle firmness can be customized from soft (yawa) to very firm (barikata), and extra noodle refills (kaedama) are available in both full and half portions.

A central self-service counter provides seasoned spicy bean sprouts, red pickled ginger, and karashi takana greens to drop into the soup at your leisure. For accompaniments, the kitchen turns out Hakata bite-sized gyoza, spicy mentaiko rice, and diced chashu over rice, which pair well with a draft beer or highball.

For those avoiding meat or dairy, the Plant-Based Akamaru uses a creamy soy-milk base lifted with aromatic oils and spicy miso to achieve depth without animal products. Every seat features a tablet ordering screen for smooth service, keeping wait times brief whether you are stopping by between shopping or heading home after work.
